Short answer: the Sennheiser HD 600. It ranks #7 of 134 over-ear headphones by sound quality, rated 4.4/5, at $272.36. The Sennheiser HD 599 ranks #71, rated 3.6/5, at $239.95, $32.41 cheaper, a saving that is not big enough to make up the sound-quality gap.
The Sennheiser HD 600 is the better-sounding choice. It earns a preference score of 91, with the midrange from 200 Hz to 6 kHz within about 0.1 dB of target, giving vocals and acoustic instruments a very natural tone. The tradeoff: Sub-bass is about 7.9 dB below target, so bass lacks rumble and weight on electronic and hip hop tracks.
The case for the Sennheiser HD 599: A preference score of 73 and a modest 2.74 dB deviation from the Harman target in oratory1990’s measurement make this a fairly smooth open back. The tradeoff: Sub-bass falls about 6 dB under target below 60 Hz, so the extra warmth sits higher up and the deepest rumble is missing.
Buy the Sennheiser HD 600. It is rated higher for sound quality, and the $32.41 you would save on the Sennheiser HD 599 does not close the gap.

The Two Headphones In Full
Sennheiser HD 600: $272.36 Amazon eBay
Pros: It earns a preference score of 91, with the midrange from 200 Hz to 6 kHz within about 0.1 dB of target, giving vocals and acoustic instruments a very natural tone. At 260 g it is light, and the long-running design from 1997 remains a reference for neutral midrange tuning. The warm and neutral tilt suits listeners who dislike bright treble.
Cons: Sub-bass is about 7.9 dB below target, so bass lacks rumble and weight on electronic and hip hop tracks. Treble from 6 to 10 kHz is about 3.6 dB low, with a 7.5 dB dip near 9.6 kHz that softens cymbals. At 300 ohms and 97 dB SPL/V it needs a dedicated headphone amp for proper volume, and the open back leaks sound.

Sennheiser HD 599: $239.95 Amazon eBay
Pros: A preference score of 73 and a modest 2.74 dB deviation from the Harman target in oratory1990’s measurement make this a fairly smooth open back. Bass runs about 2 dB above target and the lows through the low mids are about 2.7 dB up, which gives vocals and guitars a full, warm body. At 50 ohms and 106 dB sensitivity it is easy to drive, and at 250 g it is light.
Cons: Sub-bass falls about 6 dB under target below 60 Hz, so the extra warmth sits higher up and the deepest rumble is missing. A 9.6 dB dip near 9.8 kHz and about 3.5 dB less air above 10 kHz take the sparkle off cymbals, while a 3.7 dB peak near 5.7 kHz can add some edge to vocals. The open back leaks sound and offers no isolation.
